Remove from heat and add 1 C crushed graham wafers 1 C coconut ½ C cherries, walnuts or dates Spread over wafers. Cover with another layer of whole wafers. Spread with icing of your choice. 55. Pink Ladies, 5 using the following recipe: Bottom Layer 2 cup crushed graham wafers ½ cup butter 2 tsp brown sugar Mix and pack into bottom of pan Middle Layer 1 can EAGLE condensed milk 2 cups fine coconut 1 tsp vanilla Mix together and pour over bottom layer. Bake at 350 degrees until golden brown. Allow to cool. Icing Icing sugar to taste 1 tsp vanilla ¼ cup margarine 1-2 drops red food colouring Beat until fluffy and spread over top. 57. Oatmeal Date Turnover Cookies, 5 using the following recipe: Cream ¾ cup shortening 1 cup brown sugar Add 1 egg 1 tsp vanilla Sift and stir in 1 cup flour ½ tsp baking soda ½ tsp salt Add 1 ½ cup rolled oats Roll very thin. Cut with round cookie cutter and place on baking sheet Date Filling: 2 cups cut-up dates 2/3 cup water 1/3 cup brown sugar 1 tbsp lemon juice Put all 4 ingredients in pot. Cook until thickened. Drop date mixture in centre of cutouts. Fold over in half. Dab a little water to seal edges and lightly press edges with a wet fork. Bake 7-10 minutes in 350’ oven. Remove from heat and add 3 C rolled oats 6 T cocoa 1 C shredded coconut 1 tsp vanilla Drop by spoonful on waxed paper and cool 59. SPECIAL for 2006 – “Where Memories are Made” – Thimble Cookies, 5 using the following recipe: ½ cup butter ½ tsp vanilla ¼ cup brown sugar 1 egg yolk 1 cup all-purpose flour ½ tsp baking powder ¼ tsp salt 1 egg white, slightly beaten Chopped nuts Cream butter and sugar together. Add egg yolk and vanilla. Sift dry ingredients; add to creamed mixture. Roll in balls. Dip cookie balls in slightly beaten egg white; roll in chopped nuts. Place on ungreased cookie sheet. Bake in 375’F oven for 5 minutes. Remove from oven and quickly press thumb or thimble gently on top of each cookie. Return to oven for 8 minutes longer. Remove from oven. Let cool. SPECIAL: Best Homemade Chocolate Chip Cookie using DR Oetker Vanilla Sugar, 5 displayed, using the following recipe: 1 cup softened butter 1 x 9g pkg DR Oetker Vanilla Sugar 1 cup packed brown sugar ½ cup white sugar 2 eggs 2 ¼ cups all-purpose flour ½ tsp salt 1 tsp baking soda 1 x 300g pkg semi-sweet chocolate chips Preheat oven to 375’F (190’C). Beat butter, vanilla sugar, brown sugar, white sugar, and eggs with electric mixer on high until light and fluffy. Stir in flour, salt, and baking soda by hand. Mix well. Stir in chocolate chips. Drop by heaping spoonful onto ungreased cookie sheet 2 in. (5 cm) apart. Bake 10 to 12 min. until lightly browned. Transfer to rack. Cool. Makes 5 dozen cookies. Cream ½ C butter 1 C white sugar ½ C brown sugar Beat in 2 eggs Beat in 1/3 C frozen concentrated orange juice thawed and undiluted. Add oatmeal mixture & 1 tsp vanilla Sift 1 ¾ C flour 1 tsp baking powder 1 tsp soda ½ tsp salt ½ tsp ground cinnamon Blend into creamed mixture. Pour into greased 13x9 pan. Bake 30-35 min at 350 degrees Nut Topping ½ C brown sugar ¼ C butter 2 T concentrated orange juice Bring to a boil 1 min, stirring constantly. Add 1 C flaked coconut ½ C chopped walnuts Place under broiler 1 min 65. Tomato Soup Cake (iced), 5 - 2” squares displayed on a plate 66. Texas Cake using the following recipe: Only 5 (2”square) pieces need to be exhibited on a plate, leave the rest at home for the family to enjoy. 2 eggs 1 ½ C white sugar Stir 2 C flour 2 tsp soda ½ tsp salt Add 1-19 oz can crushed pineapple with juice and mix well. Bake in 9x13 glass pan at 325’F oven for 45 min. Topping 1 C white sugar 1/3 C Carnation milk ½ C butter 1 C long coconut 1 tsp vanilla Mix all ingredients. Place in microwave for 5 min. or until mixture bubbles. Prick warm cake with fork. Stir topping well and spread on top of warm cake. 69. Sour Cream Coffee Cake using the following recipe (5 slices displayed on a plate): 1 c. white sugar 1 tsp vanilla 1 c. shortening 2c. all-purpose flour 2 eggs ½ tsp baking powder 1 c. sour cream ½ tsp salt Topping - Mix: ¾ c. brown sugar 1 tsp cinnamon ½ c. walnuts Mix sugar, shortening, and eggs. Add cream and vanilla, followed by dry ingredients. Put half of batter in a well-greased loaf pan or tube pan. Sprinkle with topping mix followed by the rest of the batter. Bake at 325 for 40-50min. 70. “Wacky Cake” using the following recipe: 1 ½ C flour 1 tsp baking powder 1 tsp baking soda ½ tsp salt 1 C white sugar 3 tbsp cocoa Sift and mix and place in 8”x8” square pan. Make 3 holes in dry ingredients. In first hole add 1 tsp vinegar, in second hole add 2 tsp vanilla, in third hole add 5 tbsp melted margarine/butter. Pour 1 cup lukewarm water over all, mix well. All Purpose Flour 2 c. granulated sugar 1 tsp baking powder 1 tsp baking soda 1 tsp salt 1 cup undrained, crushed pineapple 3 eggs 1 ½ c. MAZOLA Corn or Canola Oil 2 c. mashed ripe bananas (about 5) 2 tsp vanilla Combine first 5 dry ingredients. Beat remaining ingredients together in large bowl until blended. Add dry ingredients, stirring until thoroughly combined. Spread in two greased 8 ½” x 4 1/2” (1.5L) loaf pans, dividing evenly. Bake at 350’F (180’C) for 60-70 minutes, or until toothpick inserted in centre comes out clean. Cool 15 minutes in pan, then remove to rack and cool completely.
