Oatmeal Cranberry Cookies Courtesy of http://www.inyourmail.com Yield: 9 dozen cookies 2 cups Vegetable oil 1 cup Sugar or frozen concentrate 2 cups Brown sugar or frozen concentrate 5 cups Oatmeal 4 cups Flour 1 tsp. Salt 4 Eggs 2 tsp. Baking powder 2 tsp. Vanilla 2 tsp. Baking soda 2 Tbsp. Cinnamon 1 cup Cranberries, dried 1 tsp. Nutmeg 1 cup Walnuts, chopped 1/2 tsp. Cloves, ground 1 cup Toffee chips Cream together oil and sugars. Add eggs and vanilla. Put oatmeal in blender and process until nearly powdered. Mix with flour, cinnamon, nutmeg, cloves, salt, baking powder and soda. Slowly add to sugar and oil mixture. Stir in cranberries, walnuts and toffee chips. Drop teaspoon-size balls onto ungreased cookie sheet. Bake at 375 degrees for 12 to 14 minutes. * Note: If you are using frozen concentrate, add 1/4 cup of flour or use 1/4 Cup less of liquid to balance the consistency.
