Banana Bread
From "Weight Watchers New Complete Cookbook"
Makes 12 Servings; 2 points per serving
1-3/4 cups all-purpose flour
3 tablespoons packed light brown sugar
2-1/4 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon cinnamon
8 dried dates, chopped
6 dried apricot halves, chopped
1 egg
1 very ripe banana, mashed
1/4 cup fat-free milk
1. Preheat the oven to 350 degrees F; spray an 8x4" loaf
pan with nonstick cooking spray.
2. In a medium bowl, combine the flour, brown sugar, baking
powder, salt and cinnamon; stir in the dates and apricots.
In a small bowl, beat the egg; add the banana and milk. Pour
over the flour mixture; stir just until blended (do not overmix).
3. Transfer to the pan. Bake until a toothpick inserted in the
center comes out clean, about 1 hour. Cool completely on a rack.
Per serving: 111 Calories, 1 g. Total Fat, 0 g. Saturated Fat,
18 mg. Cholesterol, 174 mg. Sodium, 24 g. Total Carbohydrates,
1 g. Dietary Fiber, 3 g. Protein, 49 mg. Calcium.
Note: The sugar may be substituted with equal amounts of frozen
fruit concentrate (apple, pineapple, mango, etc.), defrosted. Add
1/4 cup of flour or reduce the liquid in the recipe by 1/4 cup.
