CHICKEN WING DRUMETTES |
Ingredients: 10 Chicken Wing Drumettes 4 Roma Tomatoes chopped finely 1 Onion chopped finely half a red bell pepper diced finely half a teaspoon of allspice powder 2 tablespoons vegetable oil half a teaspoon cumin seeds salt and pepper to taste handful of chopped cilantro leaves For the marinade: 3 tablespoons yogurt 1 teaspoon turmeric powder 4 cloves garlic 1 inch piece ginger 1 jalapeno pepper 2 tablespoon limejuice |
Mix all the ingredients for the marinade in the food processor and rub it over the chicken and marinate for atleast 3-4 hours or more. Heat the oil in a skillet and add the cumin seeds and the onions. Let them brown and then add the tomatoes and cook until soft. Add the all spice powder and then the chicken along with the juices. Cook on high for ten minutes. Add the bell pepper and then add a cup of water and cook on medium for 20 minutes, stirring it once in a while. Add the salt and pepper to taste. Garnish with chopped cilantro leaves. Serve hot with rice or tortillas. |
