Description
|
This is a simple delicious dish, though I admit it has nothing to do with Charmed except having "Piper" in the title! It is a traditional recipe of the Basque country in France. Depending on the size of the appetites it should serve six as a lunch dish or eight as a first course.

Ingredients
|
- Bacon fat (or vegetable oil) - 500gg (about 1lb) onions, sliced - 3 large red or green peppers, cut into strips - 500g tomatoes, peeled and chopped - salt and freshly ground black pepper - majoram (quarter teaspoon or more to taste) - 6 eggs

Method
|
In a heavy frying pan melt the fat or heat the oil. Put in the onions and let them cook slowly until soft but not browned. Add the peppers and let cook until soft, then add the tomatoes, and season to taste with salt, pepper and marjoram. Cover and cook slowly until the mixture is mushy. Beat the eggs well and pour them into the pan. Stir gently, exactly as for scrambled eggs. Take care not to let them overcook. Serve with lots of fresh brown bread.
