Tomato, Zucchini and Garlic Soup
Great mediteranean taste, without too much herbs, this soup will easily accompany any italian or middle-eastern meal.
You will need:

-3 cloves of garlic, cut into coins
-1 Zucchini squash, cut into half-moons
(do not peel!)
-a good dash of olive oil
-1 big can of tomatoes
-1.5L of water
-3 broth cubes (I suggest vegetable)

Being by warming up the oil in a soup pan, and add the garlic, frying until lightly golden.  Don't over heat!  Add the zucchini slices, saute a little, then add your water, broth cubes and tomatoes.

Simmer for an hour.
