Vegetable Soup
Nancy's Salsa Sauce
1 Cup macaroni (wholewheat)
Beef base (to taste)
V8 (1 pop can size)
Califlower
Brocoli
Corn
Zukini
Cabbage
Carrots
Tomatoes (28oz)
Barley (1Cup)

Start off with 10-12 cups of water then add more as needed..
You can more of one vegetable then another, which ever vegetable you prefer the most
3 Cans diced tomatoes (28oz)
5 Green Peppers
5 Onion
4 Big garlic cloves
Tomato paste (5 1/2oz)
Jalopeno peppers(fine cut) seeds&all (6)
Corriander fresh(1/4Cup)or ground (2tsp)
Cider vinegar (between 1/4-1/2Cup)
1/4Cup brown sugar
1 tsp. salt
2 tsp. parprika
1 tsp. basil
1 tsp. oregano

Boil uncovered for 1 1/2hrs..Then simmer for 15 mins with the corriander..
Baked Vegetables And Rigatoni
Turkey Loaf
Rigatoni (4Cups cooked)
2 tbsp. olive oil
1 med. onion, chopped
1 carrot, peeled an thinly sliced
1 red bell pepper, seeded and chopped
2 tbsp. chopped garlic
1/2 lb. fresh mushrooms, sliced
2 med. zucchinin. sliced
1/2 tsp. red pepper flakes
1 tbsp. dried oregano
1 can (16oz) pasta-style cut tomatoes
salt and pepper to taste
1 Cup grated provolone or white cheddar cheese..
1 1/2 Cup. chopped onions
2 tps. olive oil
1 1/2 chopped red or green peppers
2 lbs turkey
1 Cup chicken broth
1 Cup bread crumbs
1 1/2tsp. salt
3/4 tsp pepper
2 egg whites
2 tsp. dried basil
1/4 Cup chopped parsley

Saute onions and pepper in oil..
Mix all ingredients together
Grease pan
Cook at 350 1 hr.
This baked dish can be assembled ahead of time and baked just before serving..

Preheat the oven to 375 degrees. Lightly coat an ovenproof 2 quart casserole with nonstick spray..

Cook the pasta according to package instructions.  Drain well and set aside in the casserole.  Heat the olive oil in a large deep skiller over medium heat.. Add the onion, carrot, red pepper, garlic, mushrooms and zucchini and cook 3 to 5min, until the vegetables are tender. Add the red pepper flakes, oregano and tomatoes. Stir the vegetables into the pasta. Season with salt and pepper and sprinkle the cheese over the top.  Bake for 20-25min, until heated through an the cheese is brown an bubbly.
Chessy Salmon Loaf
2 Eggs
1 C. rolled oats
2 Cans (7.5oz) salmon
1 C. lowfat mozerella cheese (250ml)
1 small chopped onion
1 celery stalk chopped
1 Lg. carrot grated
2 tbsp. lemon juice

In a large bowl beat eggs, stir in rolled oats, salmon, cheese, onions, celery, carrots, lemon juice..
Put in loaf pan
Bake at 350      for 35mins..
