Coleslaw To Can Or Freeze

1 med. head cabbage
1 lg. carrot
1 green pepper
1 sm. onion
shred together an then add:
1 tsp. salt
Let stand 1 hour
Drain water from vegetables, add syrup:

Syrup:

1 C. vinegar
1/4 C. water
2 C. sugar
1 tsp. celery seeds
1 tsp. mustard seeds
Boil for 1 min, cool...

Mix vegetables and syrup.. Pack into quart jars and process in a boiling water bath for 15 min..or put into freezer containers and freeze..
This slaw may be drained before use and mayonnaise added, or used as is...
Delicious
             Beets
10 lbs of beets
rinse beets an put in pot
cover beets with water an boil for 1hr-11/2hrs
empty boiling water an fill with cold
skin should come off easy.. Cut off ends
slice beets an put in jars
In each jar put a pinch of salt after beets are in jar

Boiling Mixture

10 Cups vinegar
6 Cups sugar
1 1/2 tsp of picklingspice (pickling spice in cheese cloth)
Boil for 20mins..
Pour mixture up to the neck of the jar..
Yellow Beans (freezing)
Boil for 3mins
Put in ice cold water
Pat dry
Put in freezer baggies

This is great to add to soups or stews..
Dutch Salad
1 quart onions
1 sm cabbage
1 sm califlower
1 quart cukes (peeled an take seeds out)
2 sweet peppers( 1red, 1 green) remove seeds

chop fine an sprinkle with one cup coarse salt an water to cover... Do not set overnight. Scald good (almost to boiling point) an drain well......

                          Sauce:
5 Cups white sugar
1 1/3 Cup flour
8 tsp mustard
1 tsp tumeric
1 quart white vinegar
1 quart water

Cook sauce until thick..Stir in vegetables..
Heat well (do not boil) an put in jars immediately...
*** Sauce will burn easy..Stir constantly..***.
