4eggs
2 cups sugar
1 cup oil
2 teaspoons vanilla
2 cups flour
1 tablespoon cinnamon
� teaspoon nutmeg
4 teaspoons baking powder
� teaspoon salt
4 cups apples chopped + peeled
� teaspoon cloves
� cup nuts chopped
1. Beat eggs, sugar, oil, and vanilla
2. Add next 5 ingredients
3. Fold in apples, cloves, and nuts(if wanted)
4. Bake in greased 9x13x2 inch pan for 55 to 65 min @ 350 degrees
1. Combine first 5 ingredients in 4 quart sauce pan.
2. Stir over low heat until blended.
3. Bring to boil over moderate heat, being careful not to mistake escaping air bubbles for boiling.
4. Then, boiling slowly, stirring constantly for 5 minutes.(overcook rather than undercook)
5. Remove from heat and stir in chocolate and vanilla (and nuts) untill melted.
6. Pour in 2 buttered 9x9 pans and cool.
Yields 5 lbs
Apple Crisp
6-8 apples peeled and sliced
� cup flour
� cup oats
1 cup brown sugar
1 stick butter
cinnamon + nutmeg
1. Spread apples in 9x9 pan.
2. Melt butter and dry ingredients.
3. Spread mixture over apples.
4. Bake for 35 minutes @ 350 degrees
Cranberry Bread
2 cups sifted flour
1 cup sugar
1 � tsp. baking powder
� tsp. baking soda
� tsp. salt
2 tbs. melted shortening
juice and grated rind of 1 orange
1 egg well beaten
1 � cups cranberries cut in half
� cup nuts
1. Sift together flour, sugar, salt, baking powder, and baking soda.
2. Combine orange juice, rind melted shortening, and 2 Tbs. Of boiling water or enough to make � cup with beaten egg.
3. Add this mixture to dry ingredients, add nuts and cranberries.
4. Let mixture stand 20 minutes before baking.
5. Bake in oven in pan about 9x5x3 @ 350 degrees for 45 to 60 minutes. Test with cake tester
Heat oven to 350degrees. Grease and flour loaf pan, 9x5x3". Beat ingredients in large mixer bowl on low speed, scraping bowl constantly, 30 sec. Beat on medium speed scraping bowl occasionally, 3 min. Pour into pan. Bake until wooden pick inserted in center comes out clean, 55 to 65 min. Cool 10 min.; remove from pan. Cool completely before slicing.
Pumpkin Nut Bread:
Substitute 1 cup canned pumpkin for the bananas. Beat in 1 tsp. ground cinnamon, 1 tsp. ground nutmeg, and � tsp. ground cloves.
Preheat oven to 350�. Conbine crust ingredients and press into a 9" spring-form pan. Place in fridge to chill
Filling
2 boxes(16oz)cream cheese
� cup sugar
1 can 16oz pumpkin
1� tsp ground cinnamon
� tsp ground ginger
� tsp nutmeg
� tsp salt
2 egg
1. Beat cream cheese and sugar in largemixing bowl till well blended.
2. Beat in pumpkin, spices, and salt.
3. Add eggs one at a time, beating thoroughly between each egg.
4. Pour into chilled crust.
5. Bake at 350� for at least 50min, until top is cracked.
