Sweet Potato Souffle 1 lg. can sweet potatoes drained and mashed 1 1/4 c sugar 2 eggs 1/2 tsp cinnamon 1/2 tsp nutmeg 3/4 stick margarine 1 c. milk
Mix all ingredients by hand mixer until creamy. Pour into buttered casserole dish. Bake for 20 min at 400. Remove from oven and top with the following: Topping:(Mix together) 1/2 c. chopped pecans 1/2 c. brown sugar 3/4 stick margarine, melted 3/4 c corn flakes Spread over potatoes and bake for 10 min. \Serves 8-10 I serve this at Thanksgiving and Christmas. Cream Cheese Corn Casserole 2 cans whole kernal corn 1 8 oz pkg cream cheese, softened 3 T margarine 1/4 tsp. garlic powder salt and pepper
Mix all ingredients together. Bake for 30 min.
Ranch Potatoes Potatoes, peeled, cubed and boiled like making mashed potatoes. Drain, add 3 T butter or margarine milk Pkg of Hidden Valley Ranch Seasoning mix pt of sour cream crisp bacon or Real Bacon Bits salt and pepper to taste
Macaroni and Cheese Boil and drain macaroni noodles. Melt together in microwave: 3 T butter or margarine 1/8 of a 2# box Velveeta Cheese 1/2 c. milk Add cheese mixture to noodles. Trent's favorite!
