Carol's Pileau


7-8 chicken thighs
2-3 pork shoulder steaks
1/2 lb bacon
2 lbs smoked sausage (cut into quarters)
2 cans beef consomme
2 env. Lipton's dry onion soup mix (plain)
5 cups rice (2 lbs)
Approx. 3 cups water
Salt and pepper to taste


Brown bacon then brown other meats, put all in large (12qt) pot
Cover good with water- add soup mix and consomme
Simmer 2 hours
Turn off heat and let sit for 30 mins to 1 hour
Remove chicken and pork-debone, add back to pot (can refridgerate at this point and finish later)
Bring to boil and add rice, cook till done. This is a very hearty meal, great for get togethers or church dinners, it makes a ton! You can freeze it, and I suggest reheating with the microwave so the rice doesn't gum together.
