The Joys of Balsamic Vinegar: Balsamic Vinegar is one of the most versitle items in cooking. Add some reduced balsamic to a demi-glace and it makes an awesome steak sauce. As well, take that reduced balsamic and dip strawberries in it, and a most wonderful sweet and tart treat you'll taste. Mix 3 parts olive oil with 1 part balsamic vinegar add some chopped fresh herbs and you have a delightful vinaigrette for salads. For those wanting recipes, I'll tell you about the last two in the paragraph above. (Its just that demi-glace can be such an involved item to make if you're not a professional cook) 1 Litre of Balsamic Vinegar 1 cup of sugar Fresh Strawberries Put the balsamic vinegar into a saucepan with the sugar. Bring to a slow simmer and reduce it until a syrup consistency. Pour into a bowl or other decorative dish and arrange strawberries on a platter with your balsamic dipping sauce close by. -------------------------------------------------------------------------------------------- 1 part Balsamic Vinegar 3 parts Olive Oil (Extra-Virgin preferable) 1 teaspoon of chopped fresh Rosemary 2 teaspoons of chopped fresh Thyme Juice from half a lemon pinch of salt and pepper Mix the balsamic, herbs, and lemon juice in a glass or stainless steel bowl. Slowly drizzle the oil in while whisking. Note: adding the oil to fast will cause the vinaigrette to break making chunks of oil and vinegar. You're looking for a nice smooth consistency. |
