Here is Vanessas Carrot Cake Recepie (as featured in The Rosie O'Donnell Show):

~*~ Vanessa Williams' Carrot Cake!~*~

Ingredients...

2 cups sugar
2 tsp. Soda
1 1/2 cups salad oil
2 tsp. Cinnamon
4 eggs
2 tsp. Baking powder
3 cups grated carrots
1 tsp salt
2 cups plain flour, sifted
1 cup raisins
1/2 cup chopped nuts

Mix sugar, oil and eggs. Add carrots, mix well, add flour, soda, baking powder, cinnamon and salt sifted together. Mix. Fold raisins and nuts into batter and bake in 2 greased 9" round layer pans or 13X9" pan.

Bake at 350 degrees about 35 or 40 minutes.

ICING

1 package (8 oz.) cream cheese
2 tsp vanilla
1/4 cup margarine
1 cup chopped nuts
1 box (1lb.) confectioner sugar

Work cheese until soft, add softened margarine, beat in sugar gradually, add flavoring and nuts, mix and spread. Enjoy!
