Special Thai Chicken With Chilies (Mild)


2.00 tablespoon oil
4.00 fresh red chilies - seeded and sliced
3.00 garlic cloves sliced
500.00 gm chicken breast sliced
1.00 onion sliced
2.00 tablespoon oyster sauce
1.00 tablespoon fish sauce *
1.00 tablespoon tamarind sauce
2.00 teaspoon brown sugar
0.50 cup straw mushrooms
0.50 cup bamboo shoots (strips)
0.50 lime juiced
6.00 bunch coriander (fresh)

*NOTE: (Fish sauce is available from Asian food shops. Alternatively substitute twice this amount soy sauce.)

Instructions:

Heat oil in wok, add chilies and garlic and fry until crisp and golden. Drain onto paper towels (but leave oil in the wok). Fry chicken and onion in oil until chicken is cooked. Add lime juice and vegetables. Fry for about 2 minutes. Add sauce.

Yield: 1 servings
