Peanut Sauce (Nam Jeem Satay)
1 3/4 cup coconut milk
3 tablespoon sugar
2 tablespoon red curry paste
1 cup ground roasted peanuts
1/4 cup fish sauce (Nam plaa)
Combine all the ingredients in a medium saucepan and simmer for 15 minutes, stirring constantly. Makes 2-1/2 cups.
