2 large eggs beaten
1/4 cup palm or brown sugar
3/4 cup rice flour
1/4 cup shredded coconut meat
1/4 cup ice water
4 to 6 firm ripe bananas
1/4 cup vegetable oil

1. Mix the eggs thoroughly with the brown sugar.

2. Add the rice flour, coconut and ice water and mix well.

3. Peel the bananas. Cut in half lengthwise, then in half crosswise. Dip each quarter in the batter and coat thoroughly.

4. Heat the oil. sauté bananas until crisp and brown, turning once. Drain on paper towels. Serve immediately.
