Hot And Sour Mushroom Soup (Tom Yam Het)


3 cups vegetable stock
1 teaspoon Nam Prik Pow sauce (click here for recipe)
1 inch lemon grass finely chopped
3 kaffir lime leaves roughly torn
1 teaspoon sugar
2 tablespoon lemon juice
2 oz oyster mushrooms coarsely chopped
1 button mushrooms
2 small fresh red or green chiles (more if desired)
1 crushed to split open

TO GARNISH coriander leaves

In a large pan, bring the vegetable stock to the boil and stir in the Nam Prik Pow sauce. Add the remaining ingredients and simmer, stirring well until the mushrooms are just cooked but still al dente. Pour into a serving bowl and garnish with coriander leaves.
