Ahhhhh, there's the rub! Wasn't that Shakespeare? If you're not a Q'er you may be asking yourself what a 'Rub' is. The answer's simple. Just about any mixture of spices you put together to rub into the meat you're cooking can qualify as a rub. I usually use a good portion of brown sugar in my rubs. You may want to do the same. Just grab one of the mixtures included here and experiment. 'Mops' are used to marinate the meat and keep it moist during cooking. A lot of good ones here. Once again, EXPERIMENT!
