Squid
I think that this is my favorite animal so far.  The males are much easier to dissect because they lack all the eggs that females have so it is easier to find the main organs.

Procedure:  after obtaining a squid, identify the 8 arms and 2 tentacles.  Next, search for the beak (you might not be able to find it, depending on the size of your squid).  Next, locate the funnel, which is on the ventral side of the animal. Then carefully cut along both lateral sides.  Cut off or pin back out of the way.  You should now be able to see the internal organs fairly well.  Note whether your specimen is a male or female.
