Crispy Fried Liver
1 pound of sliced liver (beef, calf or pork)
Vegetable oil for frying (or you may use reserved bacon fat or lard)
2 Cups of All Purpose Master Mix in a medium mixing bowl
1 Cup of Milk in a medium mixing bowl
1 large sweet onion optional
Cut liver into thin strips about 4 inchs long and 3/4 inch wide.
Put 2 Tablespoons oil into a heavy bottom skillet and bring to HOT temp over heat.
Roll strip in All Purpose Master Mix
Dredge through milk
Roll in All Purpose Master Mix again and place it in the hot sizzling oil.
Cook about 3 to 5 minutes till brown and crispy turn and cook second side.
Add oil as needed, bringing to HOT temp before adding more strips.
WITH ONIONS
Slice onion thin. Seperate rings. place onions rings in hot skillet and cover to allow steam to cook the onions. when soft remove cover and cook till brown.
Serve Liver strips smothered with onions
