Basic One-Egg Ccake Mix
1 1/2 cups (3/4 pound butter or margarine)
6 1/2 cups sugar
10 cups all purpose flour
5 Tablespoons baking powder
2 1/2 Tablespoons salt
Place butter at room temp in largest mixer bowl
Cream 1/2 minute at medium speed
Scrape sides and bottom of bowl
Cream another 1/2 minute at same speed
Add 4 cups sugar, 1 cup at a time. After each addition cream 1 minute at medium speed
Measure sifted flour, baking powder, salt and 2 1/2 cups of sugar and blend
Add 2 cups dry ingredients to butter-sugar mixture addition in 1/2 minute at medium speed. turn mixture into dry ingredients and blend until like cornmeal. Be sure all ingredients are well mixed.
Cover and store in a glass jar or air tight container. Makes 21 cups mix or 6 average sized cakes.
One Egg Cake Batter
3 1/3 cups Basic One Egg Cake Mix
1 egg
1 teaspoon vanilla
3/4 milk
Place mix in 2 quart bowl. Make a well in center of mix into this well add egg, vanilla and all the milk. Beat mixture 1 minute at low speed. Run spoon or rubber scraper around the sides and bottom of the bowl and then beat 2 minutes longer.
Batter should be smooth and free of lumps.
grease and flour baking pan (9 X 9 X 2 inch, OR 2 round layer pans) Bake at 350* for 30 - 35 minutes check for doneness when toothpick inserted in center comes out clean. Cool. Frost as desired.
