MARYLAND STEAMED SHRIMP

10 pounds fresh shrimp (12 with heads on)
1 small lemon
1 cup Old Bay Seasoning
6-pack Beer
1/2 cup white vinegar
1 tblsp kosher salt

In a large pot pour in the beer, vinegar, salt, and lemon (sliced in half) and bring to a rapid boil. Place a steamer rack in the bottom of the pot and cover with a layer of shrimp. Sprinkle the Old Bay Seasoning over the layer and repeat until all of the shrimp are in the pot. Cover tightly and let steam for 10 minutes until all of the shrimp have turned a bright red. Remove the shrimp and allow to cool. Unlike Cajuns, the people of Baltimore prefer to steam their shellfish. This is true of both shrimp and blue crabs which are done in a similar manner (minus the vinegar). As with vegetables, steaming allows the food to retain more of it's natural juices and therefore taste. Next time you're having shrimp try this. I think you'll love it.
