2 cups cold cooked white rice
2 eggs
2 tablespoons minced green onions
2 teaspoons minced fresh parsley
1/2 cup flour
Mix the rice, eggs, onions, and parsley in a bowl. Refrigerate about 1 hour.
Divide the rice into 8 equal patties. Lightly coat on both sides in the flour.
Heat 2 tablespoons of the oil in a large
skillet. Add the patties and pan-fry until golden brown on both sides, about 3 minutes per
side. These make a great change to plain white rice as an accoutrement
to other dishes.
