POTATO CAKES

4 large potatoes
1/2 cup heavy cream
1 egg
4 cloves garlic (minced)
1 cup flour
1 tablespoon parsley

 Peel the potatoes and cube. Place in a pot of salted water and lightly boil until tender.  Drain the potatoes and place in a mixing bowl with the remainder of the ingredients and mixed thoroughly to a soft dough.  Form into 8 equal cakes about 1 inch thick and fry until golden brown.  Garnish with chopped chives or fresh parsley.  For a great variation on this add in 1/2 cup of your favorite grated cheese.

Yield: 8 servings
