STROGANOFF SANDWICHES IN PITA

1 1/2pounds beef tenderloin or sirloin (very lean)
8 ounces sour cream
6 cloves garlic
3 large yellow onions
1/2 pound butter
1 tablespoon hot coarse mustard
1 packet (6-8 pieces) pita bread

Slice both the meat and the onions as thin as possible. In a large pan, saute the onions in half of the butter. Season the beef with salt and pepper, then sear in a separate pan. Reduce the heat, cover, and let cook slowly about 15 minutes. In a small saucepan, melt 1 tablespoon of butter and add the mustard and crushed garlic. Grill the pita on both sides to warm. Drain the onions and beef well. Place in a mixing bowl and fold in the mustard sauce and sour cream coating well. Stuff this mixture into the opening of the warm pita bread. These are great served with a chilled blush and grilled asparagus or zucchini. Definitely a finger food!
