large unripe Avocados 1 pint heavy cream 1/4 cup chopped spring onions 6
large cloves garlic 1/4 teaspoon salt 1/4 teaspoon ground pepper 1 cup white wine 1 tablespoon capers pinch of thyme 1/4 pound butter
Peel the avocados and cut into
cubes. In a saut� pan, place the butter, wine, onions, garlic, thyme,
and salt and pepper. Bring to a light boil and add the avocados.
Allow this to simmer
for about 15 minutes to infuse the flavors. Add in the cream and
capers and bring to a high simmer. Stir often until reduced by
half. This is a great sauce for pork loin chops or any pork for that
matter. The peppery taste of the unripened avocados brings a subtle taste
to the cream and the avocados soften to perfection.
