MARYLAND CRAB CAKES

1 pound lump crab meat (Blue Crab)
2 tablespoons mayonnaise
1 teaspoon dry mustard
1 egg
½ cup (for frying) vegetable oil
¼ teaspoon white pepper
1 cup fine unseasoned bread crumbs
1 teaspoon Old Bay seasoning
Salt and pepper

In a medium mixing bowl, combine the mustard, mayonnaise, egg, Old Bay, and bread crumbs together. Mix to incorporate. Gently fold the crab meat into this. Divide the mixture into 1/3 cup balls and form into patties, about 1-inch thick. Pour oil into a sauté pan and heat to 360 degrees about 2 minutes. Gently lay the cakes in the oil and fry for 4 minutes each side. Remove the cakes from the oil and drain on a paper towel.

Yield: 10 cakes
