DOUBLE STUFFED BAKED POTATOES

4 large baking potatoes (washed)
12 ounces cream
6 ounces pepperjack cheese
6 cloves roasted garlic
1/4 teaspoon salt
1/4 teaspoon ground pepper
1/4 pound butter
2 tablespoons chopped chives
3 tablespoons bacon bits

Preheat the oven to 350 degrees. Pierce the top side of the potatoes and bake until done. Carefully slice off the pierced side of the potatoes and scoop out the potato. Place this in a mixing bowl with the remaining ingredients (retain about 2 ounces of the cheese to top the potatoes) and whip until smooth. Pipe this mixture back into the potato skins filling them completely. Top with shredded cheese and place under the broiler until the cheese melts.
