Granny Smith apples 4 whole eggs 1 1/2 cups granulated sugar 3 ounces brandy 1
1/2 cups flour 1/4 pound butter 2 tablespoons baking powder 1/2 cup milk 1 teaspoon vanilla 1
1/2 cups brown sugar 1/2 teaspoon cinnamon pinch nutmeg
Preheat the oven to
375 degrees. Place eggs and granulated sugar in mixer and mix into a ribbon. Melt
the butter in a deep saut� pan and mix in the brown sugar. Add the flour,
vanilla, milk, and baking powder into the mixing bowl with the egg and sugar
ribbon and mix well. Place the peeled and sliced apples into the saut�
pan along with the cinnamon and nutmeg and cover allowing to simmer for
about five minutes stirring occasionally to coat the apples. Then
remove the lid and add in the brandy and simmer, uncovered, to reduce the
juices by 1/4. Allow this mixture to cool about 5 minutes and
pour the batter over it covering the apples completely with the
batter, Place the pan (uncovered) in the oven and bake at 350 degrees for
40-50 minutes. Remove from the oven and turn over onto a serving platter
while still warm. This recipe will also work well with peaches.
Don't like Brandy? Substitute Meyer's Spiced Rum! It tastes
great!!! To serve, dust with confectioners sugar or serve hot
with a scoop of vanilla ice cream. Enjoy!!
