Country French Chicken Meatloaf

I originally got this recipe from Canadian Living Magazine (probably one of the best magazines on the planet!). It's probably one of my most requested recipes now, so I figured I'd better get it up here! Serve with creamy garlic mashed potatoes and steamed green beans or some other green vegie!

6 servings

2 Tbsp butter
1 cup minced onion
2 diced, unpeeled Golden Delicious apples
2 cloves, garlic, minced
1/2 tsp dried tarragon
1/4 tsp dried savory
2/3 cup fresh bread crumbs
2 eggs, lightly beaten
1 Tbsp grated lemon rind
2 green onions, chopped
1 tsp salt
1/2 tsp pepper
1 1/2 pounds ground chicken
1/2 cup applesauce
2 Tbsp dry bread crumbs
1 Tbsp firmly packed brown sugar

In large skillet, melt butter over med heat; cook onion, apples and garlic, stirring occasionally, for 10 min, or until golden. Add tarragon and savory, cook 1 min. Let cool 10 min.

In large bowl, combine apple mixture and next 6 ingredients, gently mix in chicken. Lightly pack into greased 9" x 5" loaf pan, smoothing top.

Spread top of loaf with applesauce. Combine crumbs and sugar, sprinkle evenly over top.

Bake at 350F for about 1 1/4 hours, until cooked through. Broil 3 minutes, about 6 inches from heat.

Let stand 10 min before slicing.

Absolutely delicious the next day sliced thinly in sandwiches, if any lasts that long!

Freezes really well, too. I slice it first, and wrap in waxed paper (paper between slices) then overwrap in foil. Individual slices can then be popped into the microwave for a quick supper.
