Ingredients
4 lbs. lean ground beef                  1/4 cup curing salt
2 tblsps liquid smoke                     3/4 tsp garlic powder
1 tblsp black pepper                      2 tblsps mustard seeds
Method
Mix spices & liquid smoke in 1/2 cup water.
Add to meat and mix very well.
Separate into four(4) equal portions, and make into four rolls.
Wrap each roll in foil wrap, and store in fridge for two(2) days.
Remove from fridge and take off the foil, then place in oven on rack, over a pan of water.
Bake at 225 deg. for five(5) hours, turning every hour.
Serve hot or cold.     Freezes Well.

Ginger Fried Shredded Beef
Ingredients
1/2 lb flank steak (shredded)                    1 tblsp chopped onion
1 egg                                                      2 tblsp chopped ginger
3 oz. cornstarch                                      2 cloves garlic
vegetable oil                                            1 1/2 tblsp soy sauce
1/3 cup julienned carrots                          1 tblsp cooking wine
1/3 cup julienned celery                           1 tblsp white vinegar
1/3 cup julienned green pepper                 1/2 tblsp sesame oil                             1/4 cup sugar                                          Chinese chili powder(to taste)
Method
Mix beef and egg.  Add cornstarch and 1/4 cup water and mix well.
Deep fry beef mixture until crispy, then remove from oil and drain.
Put 1/2 tblsp oil in wok. Add celery, carrots, green pepper, green onion & ginger.
Fry on high heat.
Add garlic, soy sauce, wine, vinegar, sesame oil, sugar & chili powder.
Bring to a boil.
Add beef, mix well and serve.
Spare Ribs
Ingredients
2 or 3 lbs spare ribs                                1 tsp salt
1 lrge onion                                            1 lrge tblsp brown sugar
1 lrge green pepper                                 1/2 cup ketchup
1/2 tsp garlic salt                                    1 tsp fat
Method
Brown ribs in fat, and add onion, green pepper, salt, and garlic salt.
Cook for 15 mins, then add brown sugar and ketchup, and simmer approx: 1 hour.
Stir occasionally to prevent sticking.

Gran's Turkey Stuffing
Ingredients
1/4 cup chopped onion                           2 tsp poultry seasoning
1/4 cup margarine                                  pinch of pepper
6 cups soft bread crumbs                        1/4 cup water
1 1/2 tsps salt                                        1 lb. hamburger
Method
Brown onion in the margarine.
Mix with crumbs, salt, poultry seasoning & pepper.
Add water, and mix well, working in the hamburger.
This is enough stuffing for a 12 lb. turkey.

Cooking time for turkey   8-10 lbs --- 25 mins per lb.
                                     10-14 lbs -- 20 mins per lb.
                                     14-18 lbs -- 18 mins per lb.
