| CRUST 32 honey graham crackers 1/4 tsp salt 1/2 cup butter 1 tblsp sugar FILLING 2 cups milk 1 1/2 tsps vanilla 1/3 cup sugar 2 egg yolks 3 tblsps corn starch Pinch of salt MERINGUE 2 egg whites 2 tblsps sugar Pinch of salt 1/4 tsp vanilla |
| Method |
| CRUST Roll graham wafers until fine and pour into mixing bowl. Add salt & sugar and stir lightly. Add butter and blend as for pastry. (measure 1/4 cup of crumbs and keep for top of meringue.) Pour remaining crumbs into a 9 inch pie plate, and with a large spoon, press and mould crumbs to shape of pie plate. Bake at 350 deg(F) for approx; 15 mins. Prepare filling. FILLING Heat 1 1/2 cups of milk in the top of double-boiler, add sugar. Combine corn starch with remainder of milk and stir until smooth. Add cold milk mixture to heated milk & sugar, and stir until mixture thickens. Add salt, butter, vanilla, and beaten egg yolks. Cook approx 2 mins longer, remove from heat, cool slightly, then pour into baked graham cracker crust. MERINGUE Beat egg whites until they stand in peaks. Add salt, vanilla, and sugar. Mix well, and spread evenly over filling. Sprinkle remaining graham wafer crumbs over meringue, and brown in a slow oven. Cool and serve. |
| Ritz Cracker Apple Pie |

| Pastry for a 2 crust 9" pie 20 Ritz crackers 1 tsp cinnamon 2 cups water 1/4 tsp nutmeg 1 1/4 cups sugar butter or margarine 2 tsps cream of tartar |
| Method |
| Roll out bottom crust of pastry, and fit into 9" pie plate. Combine water, sugar, cream of tartar, and bring to boil. Drop in Ritz crackers,(whole),and keep boiling until transparent.(8-10 mins) Pour mixture into unbaked pie crust, sprinkle with cinnamon and nutmeg, and dot with butter. Cover with top crust. Trim & flute edges together. Cut slits in top to let steam escape. Bake at 425 deg (F) for 30 to 35 mins. |
