SWEDISH MEATBALLS

400 g ground beef
˝ cup of breadcrumbs
1 cup milk
1 onion, chopped
1˝ teaspoon salt
white pepper
1 egg

Mix the breadcrumbs with the milk and then let rest for 30 minutes. Thoroughly mix the meat with hands until very smooth and add salt. Add the breadcrumb mixture. Add the onion, pepper, and egg. Mix all together. Form into 1 inch meatballs. Fry over medium heat in melted margerine until completely browned. Turn the heat down and simmer. Keep turning them over. Don't fry too many at the same time.

Traditional Swedish Christmas Cake - Swedes celebrate the 13th of December in the memory of a Spanish saint called Lucia.

50 g yeast
500 ml milk
1 g saffron
˝ cup sugar
1 egg
˝ teaspoon salt
6 cups flour
200 g margarine

Preheat oven to 225°C. Melt the butter and mix in the milk. Make sure it's 37°C. Put the yeast in a bowl and pour over the butter/milk mixture. Add salt and sugar and then remaining ingredients. Leave the dough for 30 minutes (or more). Shape into individual sized 'S' shapes, tuck in the ends, and put a rainsin in each end. Leave them for another 30 minutes. Put them in the oven for about 10 minutes, or until golden brown.
