CUBAN BOCA FRIETA
(FRIED COW)

Flank steaks, simmered overnight with bay leaves and then pound flat
chopped onion
chopped bell pepper

Spices

1 teaspoon garlic powder
½ teaspoon black pepper
1 teaspoon onion powder
2 teaspoon salt
1 teaspoon cumin

Mix spices together and sprinkle on meat, then splash meat with regular sherry. Fry in very hot pan with onion and bell pepper until brown.

CUBAN BLACK BEAN SOUP

1 pound black beans, soaked overnight
4 cups chicken broth
1 bell pepper, chopped
1 ham hock
2 onions, chopped
2 pounds cubed salt pork
3 cloves garlic, chopped
2 teaspoons paprika
3 teaspoons cumin
¼ teaspoon chilli powder
2 bay leaves

Simmer for two hours, then add 2 tsp red wine vinegar. Serve with white rice or alone.
