SPINACH QUICHE

1-9-inch pastry shell
½ pack frozen chopped spinach
12 ounces plain yogurt
2 large eggs
4 ounces grated cheddar cheese
salt
freshly ground black pepper
2 ounces sliced ham (optional)
nutmeg

First take out the pastry shell to defrost (OK, I can't do pastry!).  Next, hack the frozen spinach in half and defrost one half. While that is nuking away nicely, beat the 2 eggs, add the yogurt, and 3 oz of the cheese. If you want to use ham (smoked is best)tear it in small pieces and spread it around the bottom of the pastry shell. When the spinach is ready, stir it into the egg/yogurt/cheese mixture. Add salt and black pepper to taste and pour it into the pastry shell. Sprinkle the rest of the cheese over the top, and if you really want to be brave, a little nutmeg too. Bake at 350°F for about 35 minutes (until browned).  It will rise impressively, but expect it to fall flat (!). I usually serve it cold, but warm is good too. (usually, I divide it into 12, steal one slice and spread the other slices around to make it look good).  I promise, everybody except the most rabid anti-Popeye activist will love it.

PEPPER STEAK

3 tablespoons cooking oil
2 pounds round steak, cut into thin strips
¼ cup flour
½ teaspoon salt
1/8 teaspoon pepper
3 green peppers, seeded and thinly sliced
2 onions, thinly sliced
1 clove garlic
7½ ounces tomato sauce
¼ cup soy sauce
1 beef bouillon cube
¼ cup water
1-10 ounce tin mushrooms, and juice

Heat oil in frying pan. Cut meat into short strips. Put in paper or plastic bag, containing flour, salt and pepper. Shake to coat. Brown. Transfer to 2½ quart casserole dish. Put peppers, onions and garlic into pan. Sauté until soft. Add tomato sauce, soy sauce, beef cube, water, mushrooms and juice. Break up and dissolve cube. Pour over meat. Cover and bake at 350°F for 1 hour or more until tender. Serve with rice.

MAPLE UPSIDE DOWN CAKE

1/3 cup butter, melted
¾ cup maple syrup
½ cup walnut halves

Cake

1 1/3 cup all-purpose flour
2 teaspoon baking powder
½ teaspoon salt
1 cup white sugar

Add

1/3 cup softened butter
2/3 cup milk
1 egg
1 teaspoon vanilla

In a square 9" pan add melted butter then add maple syrup. Sprinkle walnut halves evenly over bottom of pan. Set aside.

In a mixing bowl combine ingredients for cake in order given. Mix well and beat until well blended. Pour batter over walnuts and syrup and bake in preheated 350°F oven for 45 minutes, or until top springs back when touched lightly in center. Invert immediately onto serving plate and let stand 5 minutes. Cut into squares and serve warm, with whipped cream if desired.

RHUBARB CAKE

2 cups flour
½ cup margarine
1 teaspoon baking powder
1 egg, well beaten

Mix together with fork or pastry blender. Reserve 1 cup for the top. Flatten the remainder into an 8" x 10" pan.

Filling

3 cups rhubarb, chopped
1½ cups sugar
½ cup flour
½ cup margarine, melted
2 eggs beaten

Mix and spread over base. Sprinkle the reserved first mixture over the top of the filling, then sprinkle with a mixture of sugar and cinnamon. Bake at 375°F for 1 hour..
