Barbecue Beef Short Ribs INGREDIENTS: 3 1/2 pounds beef short ribs 1 tablespoon vegetable oil 1 large onion, cut into wedges 1 cup water 1 cup ketchup 1/3 cup red wine vinegar 1 tablespoon paprika 1/2 teaspoon curry powder 1/2 teaspoon chili powder 1/2 teaspoon dry mustard 2 teaspoons salt 4 medium potatoes peeled, halved 4 medium carrots; peeled, cut up 1 tablespoon cornstarch, optional 1/4 cup water PREPARATION: Combine all ingredients in slow cooker; cover and cook on LOW for 7 to 9 hours. If desired, mix cornstarche with water and blend into hot juices after short ribs and vegetables have been removed to a platter. Stir, cooking, until thickened. Move juices to a saucepan and reduce a bit on the stovetop, then blend cornstarch mixture in, for more flavorful gravy. Serves 4
