Some Hardy Eating Recipes for Hungry Critters
Shrimp Creole Soup

Ingredients:
1/2 cup stone ground whole grain flour
1/2 cup olive oil
1 cup chopped onion
1/2 teaspoon chopped garlic
3 tablespoons chopped parsley
1/2 can of large tomatoes, chopped
1 small can of tomato paste
5 cups hot water
2 bay leaves
1 1/2 teaspoons cayenne pepper
1 dash black pepper
1 1/2 pounds of raw peeled shrimp

Follow thses steps:

Make a roux with the flour and olive oil at low heat. Add the chopped onions, cellery, and garlic. Cook these, stirring constantly, until tender. Add parsley and green onions and cook for another minute or two. Add tomatoes and tomato paste and blend well. Stir in the hot water, bay leaves, salt, and pepper. Let simmer uncovered for about an hour. Add the cleaned, peeled schrimp and cook for another fifteen minutes. It takes great if you serve over rice.
