Snacks for Kids
Curry Dip for Vegetables Makes 1 cup
1- 8 oz carton plain low-fat yogurt
1/4 cup shredded carrots
2 tsp. green onions, minced (or fresh chives)
1 tblsp. mayo type salad dressing
1 tsp. sugar
11/4 tsp. curry powder
Dash pepperMix all ingredients in small bowl. Chill. Serve with crisp raw veggies
Peanut Butter SurpriseCombine equal parts of creamy peanut butter, crunchy whole-grain cereal and chopped dates (can substitute any dried fruit here)
Stir until well blended. Use as spread on tortillas, crackers; or as a stuffing for celery, cucumber boats.
Cheesy Scrambled Eggs
Makes 4 servings (1/2 english muffin each)
1 tblsp margarine
4 eggs
2 tblsp. processed cheese spread or cream cheese
2 english muffins, halved and toasted
4 process cheese food slices
Melt margarine in fry pan on low heat. Add eggs and cheese spread or cream cheese. Cook, stirring constantly, until eggs begin to set. Top each english muffin with a cheese slice, and 1/4 of the scrambled eggs
Fruit Sauce for Squiggles
This sauce is delicious when served on warm bread pudding or when substituted for syrup on pancakes, waffles, or french toast. Try it on oatmeal, too!Food processor or blender
Something for straining: cheesecloth, coffee filter, etc.
Frozen fruit (approx. 9 oz.): raspberries, strawberries, blueberries, etc.
1 oz. honeyCombine all ingredients in a blender and puree. Strain. For easy serving, put into a sauce bottle (like a squeeze bottle for ketchup). Enjoy!
Sunflower Banana Bread
1 pkg. honey bran muffin mix
1/3 cup miracle whip (or other mayo type dressing)
1/3 cup water
1/2 cup sunflower seeds (no shells!)
1 egg
1/4 cup flour
1 ripe banana, mashedHeat oven to 350F. In a medium bowl mix muffin mix, sunflower seeds and flour. In a small bowl mix remaining ingredients, blending well. Add liquid to dry ingredients, mixing just until moistenend. Pour into a greased (8.5X4.5 inch) loaf pan. Bake for 40 minutes or until toothpick inserted in centre comes out clean. Cool in pan 10 minutes; remove from pan and cool completely on wire rack. Slice and serve.
Goldfish Snack
In a large bowl, combine 1 cup each of dry chow mein noodles, pretzel sticks, Cheddar
goldfish crackers, roasted peanuts, and Cheerios. To add sweetness, add 1 cup of raisins and 1/2 cup of dried pineapple slices cut into bite-size wedges. Fold the ingredients to mix. Makes about 9 3/4-cup servings. (Store in an airtight container)
Chilly Willy Sandwich
Spread 1/4 cup of your favorite yogurt on a waffle, top with fresh fruit, and place another waffle on top. Freeze in plastic wrap. (for snack size portions you may wish to cut each waffle in half before freezing).
Apple - Fruit Leather Logs
Cover a baking sheet with plastic wrap. Spread 2 cups applesauce in a very thin layer on the wrap. Bake at 150F for 6 - 8 hours or until applesauce has a leathery look. Cool slightly and remove the plastic wrap. Roll up the fruit leather and slice it into small "logs".
Banana Bugs
Have the kids poke pretzel sticks into a not-too-ripe banana for legs and antennae. Use peanut butter for eyes and use as glue to attach a raisin spine.
Veggie Vessels
Carefully emply out the inside of a pepper of cucumber. Cut your favorite beggies in thin sticks and place in the vessel!
Go Fishing!
Goldfish crackers
pretzel sticks (fishing poles)
peanut butter.Put 1/3 cup Goldfish crackers, 10-12 pretzel sticks and 1/2 tblsp peanut butter on a plate for each child. The kids dip a fishing pole in the peanut butter and "catch" a fish with it.

cheese slices (cut into triangle shapes)Children spread peanut butter on celery; poke pretzel stick into cheese triangle like a mast; stick pretzel into peanut butter and you have a sailboat!
Jello Pops
3 oz. package of Jello flavoured gelatin
1 cup hot water
2 cups any juice (should compliment jello flavor)
small (3 oz.) paper cups (12)
12 craft sticks (wooden)
muffin tinBoil water and add gelatin....stir until dissolved. Add juice. Place paper cups in muffin tin (less spilling this way) and pour mixture into cups. Place in freezer. After about an hour insert sticks into cups. (I set my oven timer or I have the tendency to forget this step!!!) Freeze until solid.
Hot Tuna Buns
1 can chunky tuna, drained
1/2 cup thinly sliced celery
1/2 cup chopped onion
salt & pepper, to taste
1 1/2 tblsp mayo type dressing (add more if needed)
1/2 cup shredded cheddar cheese
4 bunsMix all ingredients together (except buns!!!!!!) in a small bowl. Put 1/4 of tuna mixture on each bun half, placing other half of bun on top. Wrap individually in foil and place in a 350o oven for 15-20 minutes. (CAREFUL - THE FILLING WILL BE VERY HOT!!) Serve with sliced vegies & dip!
Deviled Egg Boats
hard boiled eggs (one whole per child), cooled
mayo type dressing
1/2 to 1 tsp. mustard (depending on your taste)
salt & pepper
Small Crackers (one per egg half)Chill hard boiled eggs. Cut eggs in half lengthwise. Scoop out yolk and place in small bowl. Place egg white halves on a plate. Mix together the yolks, dressing, mustard, salt & pepper (to taste)....blending well. (The mustard is there to put in a little color...but if you prefer to taste the "zing"...then adjust for your own taste!) Spoon the yolk mixture back into the hole of the egg white. Stick a square cracker, point down, into the yolk mixture for a sail!
Note: You could also use a pretzel stick and a cheese slice cut into triangles as a sail!.
English Muffin Pizzas
8 english muffin halves
1 tsp of pizza sauce per half
toppings: pepperoni, pineapple, salami, bacon, vegies, ......your choice!
shredded mozzarella cheese (try cheddar or swiss or ???)Place 1 tsp. of pizza sauce on each muffin half. Add toppings and cheese. Place in a 350o oven just until cheese melts. About 5 minutes. These are fun to make...the kids love to help! We build a face on ours on top of the cheese with cut up toppings - that way the kids recognize their own creations - when they come out of the oven!
Grape Apple Pops - Makes 91/2 (12 oz) can (3/4 cup) frozen grape juice concentrate, thawed
23 oz Jar MOTTS Chunky Apple Sauce
9 (3 oz) cold drink cups
9 wooden popsicle sticksIn medium bowl, combine juice concentrate and apple sauce; blend well. Fill each cup with about 1/3 cup juice mixture. Place cups in freezer until partially frozen, about 1 hour. Insert sticks; freeze until firm, about 2 hours. To serve, remove drink cups by dipping cup into warm water for a few seconds.
Crunchy Bananas - Makes 41/2 cup peanut butter
2 tablespoons milk
2 firm ripe bananas
1 cup crushed cereal
Wooden popsicle sticksMix peanut butter with milk. Peel bananas, cut in half. Insert a stick in each end. Spread peanut butter mixture on banana. Roll in crushed cereal. Place on waxed paper and freeze until firm, about 2 hours.
1 1/2 cup flour
1 tablespoon baking powder
3 tablespoon sugar
1/2 cup cornmeal
1 teaspoon salt
milk
weinersMix all ingredients together and add enough milk to make a thick batter. Dip weiners into batter and deep fry.
Baby Teething Biscuits:2 T. Shortening
1/2 C. Sugar
1 Egg
1 tsp. Baking Powder
1/4 tsp Salt
1 1/2 tsp Vanilla
1 tsp Water
2 Cups baby cereal (Oatmeal is best)Heat oven to 300 degrees. Cream shortening and sugar. Add eggs, baking powder, salt, vanilla and water. Gradually stir in baby cereal. Knead until smooth. Pat into a rectangle. Cut into 1 inch bars. Smooth edges so they will not be sharp. or roll dough in a little flour and cut with cookie cutters. (circle and basic shapes are best) Bake for about 20 min. or until dry. Store in uncovered container overnight.
Kid Kabobsham
cheese
pineappleCut ham, cheese and pineapple into bite-size chunks. Put one piece of each on a pretzel.
Tuna Sandwiches1 can tuna, drained
1 small can crushed pineapple
1/2 c. raisins
3 small chopped sweet pickles
1 stick celery, chopped
3 Tbsp. mayonnaiseMix all ingredients and spread on raisin bread or white bread. Kids will have a new opinion of tuna sandwiches.
Fruitsicles1 apple
1 banana
1 orange
8 to 10 chunks canned pineapple
1 pkg. frozen berries with juice
paper cups
popsicle sticksPeel the apple, orange and banana. Cut up all of the fruit and combine in a blender and puree. Pour juice into paper cups and cover with tinfoil. Poke popsicle sticks through the top to make handles. Freeze. To remove a Fruitsicle from the cup, hold it by the stick and dip it about halfway into a dish of warm water. It should then slide out of the cup with ease. Makes 1 dozen.
Popsicles1 small pkg jello
1 cup sugar
2 cups hot water
2 cups cold waterAdd hot water to dry ingredients. Stir to dissolve. Add cold water and pour into molds. Freeze.
Fudgesicles1 pkg instant chocolate pudding mix
2 1/2 cups milk.Mix all together. Pour into molds. Freeze!
Sandwich Roll UpsLoaf of bread
Fillings such as: Peanut butter and jelly; Ham and cheese; Chicken salad; Ground beef and cheeseCut the crusts off the bread. With a rolling pin, roll out the bread until thin. Spread on the filling. Carefully roll bread lengthwise, hold together with thin pretzels! Eat as is or slice into bite sized pieces.
Banana Pops1 small package of instant banana pudding mix
2 cups skim milk
1 large banana cut in to small piecesMix pudding mix and milk together. Spoon enough pudding into popsicle cups to cover bottom. Add some banana pieces, and keep alternating pudding and bananas until popsicle cups are filled. Periodically tap the cups to get any air pockets out. Add stick, freeze; and enjoy!
Try other small pieces of fruit (peaches, strawberries, pineapple...) with other pudding flavors!
