Chizu Salada
Moroccan Carrot Salad

Carrots, simply steamed, seasoned with Spices.




1 lb Carrots (peeled - cut into 1/4" slices)

3 cups Water
1/4 tsp Salt

1/2 tsp ground Cumin
1/2 tsp Sweet Paprika
1/4 - 1/2 tsp Cayenne Pepper OR Red Pepper Flakes [OPTIONAL]
1 Tbl Olive Oil
4 Tbls fresh Lemon Juice

2 Tbls fresh Parsley (chopped)




1. Bring Water & Salt to boil, add sliced Carrots,
          boil gently 5 - 8 minutes until slightly softened.

2. Drain boiled Carrots,
          Add spices, Oil & Lemon Juice. Stir.

3. Refrigerate, allow to marinate at least 1 hour.

4. Garnish with chopped Parsely just before serving.
