Humus b'Tahina
Chickpea and Sesame Dip

This is virtually a necessity of any Middle Eastern meal.
The beans combined with the sesame seeds & wheat of Pita bread
provide complete protein. Eaten with a variety of vegetables, it makes a
totally nutritious vegetarian meal. Of course, it also goes great with meat.




16 oz boiled Chick Peas (Garbanzo Beans)
     (Canned cooked Chick Peas are equally acceptable.)

4 Tbls Sesame Paste

1/2 - 3 tsp Garlic (mashed)
     [Some people prefer Humus with just a touch of garlic.
          Others prefer it very garlicky.]

1 - 3 Tbls fresh Lemon Juice
     [Some people prefer Humus with just a touch of lemon.
          Others prefer it very lemony.]

1/8 tsp ground Cumin

0 - 2 tsp Salt
     [If using canned Chick Peas, you may not need salt.]

The cooking water OR the liquid from canned Chick Peas
     plus additional water if needed




1. Procees all ingredients, adding water slowly
     until you get the desired consistancy

     [Some people prefer Humus to be very thick,
          others prefer it almost runny.]

     [Some people prefer Humus to be very smooth,
          others prefer it chunky style.]
