Goulash

Goulash can be made as a thick stew or as a soup.
The common ingredients are meat and paprika.
Lots of paprika, hot and/or sweet.

Servings: 4

Ingredients:

1 ¾ lbs Beef, in 1 inch cubes (800 gr)
4 Tbls Oil

2 medium Onions (thinly sliced) 
4 Tbls Paprika
2 cups Beef Stock
1 cup Water
Either (1 cup Dry Red Wine + 1 Tbl Lemon Juice)
          (OR 1/4 cup Red Wine Vinegar + 3/4 cup Water)

2 medium Green Bell Peppers OR Hungarian Peppers, diced 1/2 inch
1 tsp minced Garlic
2 Tbls Tomato Paste
2 tsps ground Caraway Seed
1 Bay Leaf

4 medium Potatoes, peeled and cut into 1 inch cubes
Additional Water if necessary
1/4 tsp Salt
1/4 tsp ground Black Pepper

1. Heat Oil.
2. Brown Beef, remove and set aside.
3. Drain away all but 2 Tbls of Oil, Saute Onions until translucent.
4. Add Paprika. Stir with Onion 1 minute.
5. Return beef to pot. Add liquids.
          Bring to boil, lower heat, simmer partly covered 45 minutes.
6. Add Bell Peppers, Garlic, Tomato Paste, Caraway and Bay Leaf.
          Return to simmer, continue cooing partly covered 45 minutes.
7. Add Potatoes. Continue simmering 1/2 - 3/4 hour
          (adding up to a cup of water if necessary)
          (until meat and potatoes are tender.)
8. Adjust salt if necessary and add black pepper is desired.

Serve on slices of Rye Bread or Pumpernickel or with wide Egg Noodles
