Saudi Arabian Style Baba Ganoosh Squash with Sesame & Garlic This is not Baba Ganoosh at all. But it has almost the same ingredients. Serve it as a first course dip with Pita bread, or as a side dish with grilled meat or fish. 1 1/2 lbs Squash (Acorn, Butternut or Pumpkin) 1/2 tsp Olive Oil 1-2 tsp Garlic (crushed) 1 Tbl Olive Oil 2 Tbls Sesame Paste (Tahina) 2 Tbls fresh Lemon Juice 1/2 tsp Salt cold Water [OPTIONAL] 1/4 cup Parsely (finely chopped) 1. Preheat oven to 400° F. 2. Cut squash in half, remove seeds. Brush cut part with 1/2 tsp Olive Oil. Place cut side down on baking sheet. Bake about 1 hour or until inside is soft. 3. When Squash is cooked remove from oven, allow to cool slightly, Dig out Squash pulp, transfer to a large bowl, mash well 4. Heat very small fry pan, add 2 Tbls Olive Oil, saute Garlic briefly until golden, 5. Add Garlic & Oil to mashed Squash. Add Sesame Paste, Lemon Juice & Salt. 6. While mixing and mashing, add water slowly. [Add OPTIONAL Parsley OR save for a garnish later] When the mixture is the consistancy of very light mashed potatoes, transfer to a serving dish OR refrigerate for later. |
