Tunisian Fricasse
Prepare Bread Dough Recipe. Let rise once.

On a floured surface kneed dough for about 1 minute. Roll into rectangle about 1" thick. Cut out 6" x 3" rectangles or ovals. Separate and let rise until double in bulk ( about 1/2-3/4 hour ).

Lift each rectangle with a spatula and slip upside-down into hot oil. Flip after about 5 seconds. Brown on both sided until golden. remove and drain on paper towels.

Cut each fricasse in half, leaving one side attached ( hotdog bun style )

Traditionally these are filled by spreading with humus and filling with tuna, chopped salad, Moroccan salsa, and black olives.

This is the ultimate sandwich!! Can be filled with most anything! Even Sloppy Joes or chicken salad, tuna salad, etc...

Israeli Chopped Salad
Humus
Moroccan Salsa
or
Moroccan Eggplant Salsa
Or regular Moroccan salsa
Pitted black olives
( chopped )
