North African Potato Patties
Oil for frying
4 medium potatoes
1 small onion ( finely chopped )
1/4 C cilantro ( finely chopped )
2 eggs
1/2 t salt
1/4 t pepper
Boil potatoes until 3/4 cooked but firm. Let cool and peel.

Grate potatoes into bowl. Add onion, cilantro, eggs, salt & pepper.

Heat oil on stove top in frying pan. Oil should be about 1/2-3/4 inch deep.

With a fork blend all ingredients well. Drop by tablespoon into very hot oil. Do not touch or stir! Turn carefully ONLY when edges of patties are well browned. Remove from oil when side 2 is well browned onto paper towels.

*Best served right away
*If reheated in microwave the patties lose their crispiness
