Candied Yams
8 fresh medium sized sweet potatoes
1/2 C brown sugar
1/4 t salt
1/4 t pepper
2 1/2 T butter
Peel sweet potatoes, cut in half or fourths. Cover with water in pot and boil until soft. Drain.

Place in baking dish and sprinkle with brown sugar, salt & pepper. Smooth top and dab with butter. Bake at 200 C until browned and bubbly.
