| Mashed Potato Casserole |

| Peel, cube and boil potatoes until very soft. Drain and mash with a hand held potato masher. Chunks are actually welcome in this dish. In a frying pan, heat oil and add mushrooms and onions. Fry until onions are well browned but not burned. In 1 1/2 C water add flour and powdered mushroom soup, or use one can of condensed mushroom soup instead.. Stir with a fork until smooth and there are no lumps. Pour into mushroom/onion mixture, add salt and pepper and stir well until thickens ( about 5-8 minutes ). Mix into mashed potatoes and pour into greased cake tin ( preferably square ). Smooth out and flatten. Top with crushed potato chips or brush with melted butter and bake at 200 C until browned. |
| 3 T oil 1 Can mushroom pieces 1 large onion 1 1/2 C water 1 1/2 T flour 2 T powdered mushroom soup 8 potatoes 1/2 t salt 1/2 t pepper 1/8 C melted butter |
