| 6-8 green bell peppers 1/2 Kilo ( 1 pound ) ground beef 1 C cooked white rice 1 small onion ( chopped ) 1 T oil 2 T parsley ( chopped ) 1/2 t crushed garlic 1/4 t salt 1/8 pepper Sauce; 2 C water 2 T olive oil 3 T tomato paste 1 t paprika 1/4 t chili powder 1 t crushed garlic 1/4 t salt 1/8 t pepper |
| Cut tops off of peppers and remove seeds. Place in soup pot and cover with water. Boil until pepper color changes to grey-green but not soggy. Drain and cool a bit. Fry chopped onion in 1 T oil until browned but not burned. Cool slightly. In a bowl combine ground beef, rice parsley, garlic, salt & pepper and fried onions. Mix well. Fill each pepper to brim, with medium packing pressure. Place in a baking dish. Mix all sauce ingredients together and pour over stuffed peppers. Make sure that each pepper is basted. Bake uncovered at 200 C until nicely browned ( almost burned ) and juices have thickened into a nice sauce. Serve over white rice. Easy as 1-2-3! |
