| Beat oil in large frying pan or skillet, add ground beef, garlic and onion. Chop and fry until cooked but not dry. Add salt, pepper, paprika, chili powder and flakes. Fry for another 30 seconds while mixing. Add water and tomato paste mix well. Peel and slice potatoes about 1/2 cm thick. Lay on top of mixture pressing them into the liquid. Srinkle cilantro over the entire surface and cover. Cook on low flame until liquid had evaporated and potatoes are well cooked. A thick sauce should remain. Do not stir. Shake once in a while to check for sticking. If the potatoes aren't done yet and the liquid has evaporated, add more water and cover. Let evaporate again. Be careful not to burn in last stages. Keep on low flame until done. |
