Meat & Potatoes
In soup pot, heat oil. Add chopped onion and fry until slightly browned. Add tomatoes and stir for 1 minute. Add water and beef cubes, cover and let boil on very low bubble ( simmer ) for about an hour. Add the rest of the ingredients mixing well, leaving potatoes last.

Peel and cube potatoes, add to meat in the pot. Make sure they are covered with the liquid. If not add more water. Cover and let boil until most liquid has evaporated. The meat and potatoes should be resting in a thick sauce.
3 T oil
1 large onion ( chopped )
2 tomatoes ( peeled & cubed )
4 C chuck beef ( 1" cubes )
10 C water
1/2 t crushed garlic
1/8 C cilantro ( chopped )
5 T tomatoe paste
1/2 t salt
1/4 t pepper
1 t chili flakes
1/4 t cumin
1/4 t curry powder
4 medium potatoes
( peeled and cubed )
