| Homemade Vanilla Pudding With Fruit |

| 1 1/2 C milk 1/3 C sugar 1/4 t salt 3 1/2 T cornstarch or potato flour 1/2 C milk 1 egg yolk 1 t vanilla |
| Put milk, 1 1/2 C sugar and salt in a sauce pan. Stir on med heat until sugar is totally desolved. Do not boil, only scald. Take off heat. In 1/2 C cold milk beat in 1 egg yolk and 3 1/2 T cornstarch and vanilla. Add to hot milk mixture in sauce pan. Stirring constantly with a soup spoon or wooden spoon. Place back on lowest heat possible while constantly stirring. The pudding will thicken fast, so keep stirring as to avoid lumps. Stir until pudding is very thick and of the correct consistancy. This is a very easy and fast pudding, amazingly tasty and smooth IF constantly stirred while on low flame. If it tastes starchy it's not done. Chill for two hours before serving with fruit, or using as filling for doughnuts, cakes and pies. Add fruit of choice over pudding in small pudding dishes or cocktail glasses. Great with fresh or canned fruits! |
